How a Grease Trap Works

The Basic Flow

When wastewater leaves your sinks, dishwashers, and floor drains, it flows into the grease trap before it reaches the sewer line. Inside the trap, the water slows down. This is intentional. Slowing the water down gives FOG time to separate from the water naturally.

Here’s the key to understanding why this works: grease and water don’t mix, and grease is less dense than water. Given a moment to settle, grease will float to the top. Solids — food particles and debris — sink to the bottom. The relatively clean water in the middle is what gets pushed through to the sewer.

The Role of Baffles

Most grease traps contain baffles — internal dividers or walls that control how water moves through the unit. Baffles force the water to travel a longer, slower path, which gives more time for separation to happen. They also prevent the floating grease layer from escaping out the outlet before it can be captured.

Think of it like a series of slow-moving rooms. The grease rises and gets trapped at the top. The sludge settles at the bottom. The middle layer — treated water — continues on its way.

Why Grease Solidifies — and Why That’s a Problem

FOG is liquid when it’s hot, which is why it goes down the drain so easily in the first place. But as it cools — whether inside your grease trap, inside your pipes, or further down in the sewer line — it transitions from a liquid to a semi-solid or solid state. The same thing that makes bacon fat congeal in a pan after breakfast is exactly what happens in your plumbing.

As that solidified grease accumulates inside a grease trap, it reduces the effective capacity of the unit. Less space means less separation time. Less separation time means more FOG is escaping into the sewer. And eventually, the trap fills up entirely — and stops functioning as a trap at all.

Types of Grease Traps

Not all grease traps are the same. There are three main types, each suited to different kitchen sizes and situations. Understanding which one applies to you is important — especially if you’re setting up a new kitchen or being asked to upgrade your current setup.

1. Passive (Manual) Grease Traps — Under-Sink Units

These are the smaller units installed directly under a sink or at the point of use in the kitchen. They’re typically made of metal or plastic and hold anywhere from a few gallons to around 50 gallons of capacity.

Passive traps are most common in smaller operations — a café, a small restaurant with limited fryer use, or a single kitchen station in a larger facility. They’re installed close to the source of the grease (right under the sink), which keeps the grease from traveling far before being captured.

The downside: because they’re small, they fill up quickly and require frequent manual cleaning — often weekly or even daily in a high-volume environment. In many jurisdictions, under-sink units are no longer accepted for full commercial kitchens because they simply can’t keep up with the volume.

2. Automatic Grease Removal Units (AGRUs)

An automatic grease removal unit, or AGRU, is a more advanced version of the passive trap. It uses a heating mechanism and a skimming wheel or wiper to automatically separate and remove the grease from the unit at regular intervals, typically daily.

AGRUs are designed to reduce how often a human has to manually clean the unit. The removed grease is collected in a separate container and must still be disposed of properly — but the day-to-day management is automated.

These units are a good fit for kitchens that want a cleaner maintenance process or where access for regular manual cleaning is difficult. They cost more upfront but can reduce labor and service frequency over time.

3. In-Ground Grease Interceptors

For larger restaurants, full-service kitchens, hotels, hospitals, stadiums, or any high-volume commercial cooking operation, the right solution is almost always an in-ground interceptor.

These are large concrete or fiberglass tanks installed underground — typically outside the building, in a parking lot, or along the side of the structure. They hold anywhere from 500 to several thousand gallons and are designed to handle the continuous volume of a busy kitchen day after day.

In-ground interceptors operate on the same separation principle as smaller traps, just at a scale that matches the output of a serious commercial kitchen. They require professional pumping by a licensed waste hauler — like Southwaste — on a scheduled basis.

  • Meal count and seating capacity. A restaurant serving 50 covers a day needs significantly less capacity than one serving 300. Local codes often use meals per day as a starting benchmark.
  • Type of cooking. Fryer-heavy operations — fried chicken, seafood, fast food — generate dramatically more FOG than, say, a salad bar or a bakery. The grease load per meal is not the same across menu types.
  • Number and type of fixtures. How many sinks, dishwashers, and floor drains are connected to the unit matters. The grease trap must be sized to handle peak flow, not just average flow.
  • Flow rate. Sizing calculations typically involve the flow rate of water entering the unit — measured in gallons per minute — to ensure the trap can slow the flow enough for proper separation.
  • Local code minimums. Your municipality may have specific minimum sizes based on kitchen type or seating capacity. These aren’t guidelines — they’re requirements.

Slow Drains

The first sign is almost always slow drains. When a grease trap is approaching full capacity, water backs up through the system because there’s nowhere for it to go fast enough. Kitchen staff notice the sinks draining sluggishly. Floor drains may start to pool. This is your early warning sign.

Backups

When the trap is completely full, drainage stops working the way it should. Wastewater can back up into the kitchen — coming up through floor drains, filling sinks. This isn’t just an inconvenience.
